Do you ever wonder why there are certain people that you just can’t seem to let go of? I know I certainly do and I know that I’ve been in a situation with a man that I was dating off and on for three years and throughout those three years we had a lot of good times and bad times but for the life of me I just couldn’t let him go, no matter how much I told myself that I should. We had met when we were eighteen years old so it was definitely young love but it was intense. The beginning of our relationship started off great but as it progressed over the years I began to realize how incompatible we really were. We wanted different things for our lives and he wasn’t as emotionally available as I would’ve liked, but even though he lacked in certain areas I couldn’t let him go and he couldn’t let me go. So my question is why is it so hard to let go of someone or something that isn’t good for you?
I have this yummy and completely amazing recipe that I tried out recently and I have to say that they came out so good and they were a big hit amongst my family and friends. These cupcakes aren’t just tasty but they are also super cute and festive. This recipe that I am posting is for pineapple upside down cupcakes, and I know what you are thinking, you’re thinking how freaking cute! I know right, I can’t even deal. So I have the ingredients and directions listed below so check them out and let me know how they came out for you!
2/3 cup white sugar
4 Tbsp pineapple juice
2/3 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 cup butter (1/2 stick or 4 Tbsp)
2/3 cup brown sugar (packed)
1-can pineapple rings
Preheat oven to 350 degrees. Spray your muffin tins with non-stick cooking spray.
In a mixing bowl, add eggs, white sugar, and pineapple juice. Beat for 2 minutes. In a separate bowl, sift together the flour, baking powder, and salt. Add to the wet ingredients and turn mixer back on for 2 minutes.
In a small sauce pan, melt the butter and add the brown sugar. Stir on low heat for one minute.
Spoon a layer of the warm brown sugar mixture into the bottom of each muffin tin, then place a pineapple ring on top. Add a cherry in the middle of each pineapple. Pour cake mixture over to fill muffin tin 3/4 of the way full. If you are using regular muffin tins, you will need to cut down the rings to fit or just use pineapple tidbits.
Bake jumbo cakes for 25 minutes. Bake regular cakes for 20 minutes. If you choose to make a large cake, bake for 22-25 minutes in a 10 inch cast iron skillet. The cake is done with a toothpick inserted in the middle comes out clean.
Remove from the oven. Let cool in pan for 3 minutes. Run a knife around the edge of each cake to help loosen in case it sticks a little. Place a wire cooling rack on top, and quickly flip over on top of sheet tray to catch extra drippings.
So as I start off this 29th year I wanna talk about how important it is to live your life to the fullest. Life is short man and these days fly by so fast so it’s important to do all of the things that you enjoy and to just live your life for you. It’s so easy to put off things until tomorrow but once you create that habit it’s hard to break and before you know it years have gone by without you ever doing the things that you’ve always wanted to do. Travel the world and experience different cultures; eat their cuisine and see all the sites. This world is too big to just be stuck in your little bubble; experience life, embrace life and find your passion. I know that some of you may have other financial responsibilities that may make it a bit hard for you to do this but that’s why saving and budgeting is key. Even if you put away $5 a week you’ll eventually have enough to travel somewhere. What I’m saying is just don’t put off til tomorrow what you can do today. Be free lovelies and enjoy yourself and don’t let anyone make you feel bad about it because at the end of the day it’s your life and you’re the only that has to live it. So as I get ready to head off to New Orleans to celebrate my birthday, I’m going to go enjoy this life of mine, I hope you all do the same.
